What is Stone Milling?
Stone milling is a traditional Mediterranean method of Cold Pressing extra virgin olive oil, used for generations across Lebanon and the wider region. Whole olives are slowly crushed under stone wheels, creating minimal heat and helping preserve natural aromas and flavour compounds.
Lebanon’s Mediterranean climate, mineral-rich soils, and long-established olive groves make it especially suited to this gentle extraction method. Stone-milled olive oil is typically smoother and more balanced, reflecting both the olive variety and its terroir.
At Northern Harvest, our Stone Milled Extra Virgin Olive Oil is produced in small batches, prioritising quality, traceability, and traditional craftsmanship over speed or volume.
Why We Lightly Filter Our Olive Oil
At Northern Harvest, our olive oil is lightly filtered through traditional cotton sheets — a gentle method that helps preserve the character of the oil while removing excess sediment.
Unlike heavy industrial filtration, this process keeps the oil clean without stripping away the natural compounds that give it its flavour, aroma, and nutritional value.
By using cotton filtration, we’re able to:
- Maintain the oil’s vibrant taste and aroma
- Preserve naturally occurring antioxidants
- Improve clarity while still respecting a more traditional production method
This approach reflects our philosophy — minimal intervention, maximum quality. We don’t over-process our oil. We simply refine it just enough to ensure stability, while keeping everything that makes it special.
The result is an olive oil that feels closer to its origin — fresh, balanced, and true to the way it’s been made for generations.
What Makes Northern Harvest Different
At Northern Harvest, we don’t follow modern shortcuts.
We follow tradition — carefully, intentionally, and with purpose.
Every bottle we produce is shaped by a commitment to doing things the right way, not the fastest way.
Stone Milled for Integrity and Flavour
We use a traditional stone milling process, where whole olives are slowly crushed under granite wheels.
This method generates minimal heat, helping protect the olive’s natural character — its aroma, its flavour, and its nutritional value.
The result is an oil that is richer, more vibrant, and true to its origin.
Not rushed. Not overworked. Just made the way it was meant to be.
Gently Filtered — Never Over Processed
After extraction, our oil is lightly filtered through natural cotton sheets.
It’s a simple, traditional step that removes excess sediment without stripping away what matters most.
No heavy machinery. No aggressive refinement.
Just a cleaner, more stable oil that still holds onto its depth, purity, and natural profile.
Single Estate — One True Origin
Our olives come from one grove in North Lebanon — not multiple farms, not blended regions.
This means every bottle carries a consistent flavour, shaped by the same soil, climate, and environment.
It’s olive oil with a clear identity — authentic, traceable, and honest.
Small Batch — Quality First
We don’t produce in bulk, and we don’t aim to.
Each batch is made in limited quantities so we can focus on what really matters — care, precision, and quality.
Because when you slow things down, you don’t lose efficiency — you gain excellence.
Family Crafted — Generations Deep
Olive oil isn’t just what we do — it’s part of who we are.
Our process is built on generations of knowledge, passed down and refined over time.
Every step is handled with care, pride, and respect for tradition — from harvest to bottle.
Australian Owned — Quality Assured
While our roots are in Lebanon, Northern Harvest is proudly Australian owned.
Every batch meets strict Australian standards, ensuring you receive a product you can trust — not just in flavour, but in quality and consistency.
More Than Just Olive Oil
This isn’t mass-produced oil made for shelves.
This is olive oil made with intention —
from one place, one process, and one philosophy: quality over everything.
