Our olive oil comes from a single olive grove located in North Lebanon. The olive is stone milled cold pressed, using large stone wheels gently crushing the olives. This is a slower process favouring quality over yield, no shortcuts no blending.  

Stone milling is a traditional method of crushing whole olives (flesh and pit) using large granite stones. The olives are slowly ground at low temperatures, which helps preserve their natural aromas, flavour and antioxidants. It’s a gentle, time-honoured process that prioritises quality over speed—resulting in olive oil that’s more expressive, balanced, and true to the fruit.

Store your olive oil in a cool, dark place, away from direct sunlight, heat, and air. A pantry or cupboard is ideal. Keep the bottle tightly sealed after each use to protect its flavour and freshness.

Avoid storing olive oil near the stove or in clear light-filled areas—proper storage helps preserve its taste, aroma, and natural antioxidants for longer.

Once opened, olive oil is best enjoyed within 3–6 months for peak flavour and freshness. It won’t suddenly go bad after this time, but its aroma and vibrancy will slowly fade.

To make it last longer, store it in a cool, dark place, keep the lid tightly sealed, and avoid exposure to heat, light, and air.

Extra virgin olive oil is incredibly versatile. Beyond the kitchen, you can use it to:

  • Finish dishes – drizzle over soups, hummus, labneh, salads, or grilled vegetables
  • Bread & grazing – dip with fresh bread, za’atar, or sea salt
